The gastronomic proposal of Scottiglia is the perfect synthesis of tradition and innovation, the result of careful research and continuous experimentation. This is perhaps the greatest strength of the young brigade, led by Laura Clementi, an eclectic chef with important collaborations with Michelin-starred restaurants such as “Poggio alle Mura” at Castello Banfi. She brings freshness, creativity, and innovation to the kitchen, which the two owners, Fabio and Massimo, have welcomed with satisfaction, making it a real reference point in Amiata for their reinterpretations of traditional Maremma dishes. Alongside Chef Lara is Dimitri, a passionate gastronomic experimenter with a background as a butcher in Montalcino, Florence, and elsewhere, which has allowed him to become an expert in cuts and different uses of various meats, offering always new and enticing proposals. Raja is the newest addition to the brigade, but certainly not of least importance. Her young age and Moroccan origins have added that touch of internationalism that was missing, completing the restaurant’s cuisine, always open to the contamination of tastes and products. Mature and innovative, the gastronomic proposal of Scottiglia is today a unique experience on the territory for the selection of raw materials, the proposal of homemade breads, the list of wines, and the creativity of dishes that follow seasonality, offering a menu that changes often and never gets boring. To complete the dining experience, there is a long and varied selection of national and international wines, carefully curated by the two owners, Fabio and Massimo, veteran sommeliers who love building personal relationships with almost all of the producers featured on the menu.
